One of the most popular persimmon trees, the Fuyugaki or Fuyu, is a small deciduous tree that produces medium-large, tomato-shaped fruit with distinct vertical indentations, giving it an almost square appearance. This non-astringent persimmon is deep orange with light orange flesh and ripens in late October to early November. The sweet, mild fruit can be eaten fresh or used in jellies and pies and keeps well for later use. The Fuyugaki tree is pest- and disease-resistant, grows 15-20 feet tall and wide, and thrives in full sun to partial shade with well-drained soil. Semi-self-pollinating, it produces larger crops when planted alongside a second tree. The Fuyugaki is grafted onto native american persimmon rootstock and is hardy in USDA Zones 8-9.
